Star product from Olmeda Orígenes, an exclusive product coming from top quality Iberian pigs fed in open air in the thick meadows of Extremadura: a thin slice of this cured ham is a real pleasure for all the senses, with an incomparable flavor and an extraordinary aroma.

These Black Iberian pigs are grazed in freedom and its only alimentation is based on acorns falling from Holm oaks and cork oaks trees from the Mediterranean forests. Our pigs are eating 9 Kgs of acorns and herbs every day, hence its aromatic nuts nuances. An Iberian pork meat is easily recognizable due to its black hoof and fat infiltrations, typical of this exclusive breed. When the pigs weight 180 Kgs minimum they are slaughtered, and then the ham pass through a natural curing process that lasts from 24 to 30 months. They are selected at their optimum state to be consumed, some pieces having white dots indicating that these Iberian Hams have been cured perfectly. Thanks to their acorn-based alimentation, these hams apart from being an authentic delicacy to the palate, they have beneficial properties to the health: with high levels of oleic acid, it also helps reducing bad levels of cholesterol.

Tasting note

It has an elongated shape and a fine cannon bone. 

It is covered with a very soft, shiny layer of fat.

The meat has red purple colour with fat infiltrations. It melts in your mouth with hundreds of very intense and lengthy aromatic nuts nuances.

Simply delicious. Every hams are different and unique. 

Best served between 20°-24°. In order to savour and enjoy the subtleties of this Jamón Ibérico de Bellota, it should be cut in very fine slices.
