Fan of the original Italian carbonara recipe? We are introducing the star ingredient of the famous Italian carbonara pasta: the guanciale.

Guanciale is a very succulent meat that brings an incomparable flavor and aroma to a multitude of dishes, thanks to its higher percentage of fat. It is made from pork jowl, a very meaty part of the pig with a more intense flavor. Our prime guanciale is made from Iberian acorn-fed pigs, who have bred in freedom in the impressive Castilian mountain range of Segovia, at an altitude of 1099 metres. These noblest pieces are carefully marinated with paprika, salt and garlic; and then left to cure for four-five months so to confer them the most delicious flavor. Guanciale is also used in a variety of stews, soups, sauces and casseroles since its fat perfectly balances and blends together the rest of the ingredients.
