Iberico 100% bellota chorizo come from porks raised in liberty, feed with 9 kgs of acorns per day and gaining 1kg of fat and meat every day. By the end of the season, which lasts from October to late February, the pigs will be 180 kgs minimum. The pieces are cured for 90 days in natural cellars in Salamanca and are hand cut by professionals to guarantee the best slices and the 100% profitability of the product. Then the chorizo is hand packed in a vacuum sealed grass jar, an environmental-friendly packaging free of any plastic use. The use of glass guarantees the perfect conservation of the lean and fat of the chorizo, which mixed with the best herbs&spices makes this chorizo a true Spanish delicatessen.
