Partridge breast

The partridge is a small bird of approximately 400 gr. to 500 gr. that lives in the wild throughout Spain. The Olmeda Origenes partridge comes from the province of Jaén (Andalusia) and is shot during the hunting season between October and February. They have very clean meat, with an intense flavour and a reddish-white colour. They are reared in the wild and feed on what they find in nature, mainly grain and grass from the countryside, which means that they have a higher level of vitamins and minerals than other meats.
The partridges are selected according to their age and size before being eviscerated and plucked by hand. Once the partridges have been slaughtered, they are packaged and deep-frozen so that they can be eaten all year round. The size of the partridge is between 230 and 260 gr.
