Our dairy in Udabe-Beramendi (Navarra) produces for Olmeda Orígenes this premium Idiazabal Cheese with Denomination of Origin. Elaborated from the milk of Latxa and Carranzana Sheep breeds, Olmeda Orígenes Idiazabal Cheese is manually molded and left to age for five months to guarantee the best quality.

We offer you the natural Idiazabal or the smoked version, which is put into an artisan smoking chamber with beech or birch tree. It is straw-coloured with a characteristic intense aroma. Its flavour is profound, savory and with a mouth filling sensation. It has a light touch of herbs and with an aftertaste reminiscent of hay.
