What Is D.O. (Denomination of Origin)?

The Designation of Origin (D.O.) is a certification of geographic authenticity and quality. It ensures our vinegar is:

Crafted with the Criaderas and Soleras Aging System

Our Sherry Vinegar Reserva D.O. is made from 100% Palomino Fino grapes, following the same methods used in traditional Sherry wine production. The wine undergoes natural acetic fermentation and is then aged in oak casks for a minimum of two years.

The process follows the criaderas and soleras system. It is a dynamic aging method that blends vinegars of different ages to develop depth, complexity, and consistency.

Step by Step:

  1. Aging Cellars: Casks are stacked in tiers (called “andanas”) up to four levels high, sorted by aging stage.
  2. Cask Alignment: Each level is a tier, with the bottom row (“solera”) holding the oldest vinegar, and the upper levels (“criaderas”) holding progressively younger batches.
  3. Vinegar Extraction (“Saca”): A small amount is drawn from the solera for bottling.
  4. Solera Refill: This amount is replaced with vinegar from the first criadera (second tier).
  5. Criadera Refill: That vinegar is then replaced with vinegar from the next criadera, continuing up the system to the youngest vinegar.
  6. Running the Scales: This precise transfer is done using special tools like the canoa and rociador, ensuring balance and gradual aging.
