The “Albufera de Valencia” is one of the richest ecosystems in Spain. It is a freshwater lagoon that lies within various Mediterranean villages. We select our rice “Arroz Bomba Olmeda Origenes” from some of these villages: Sollana, Silla or Sueca. The “Arroz Bomba” is an unique variety of rice. It has a round, short grain that increments three time in size when cooked. It keeps all the aromas and subtleties of the dish.
The grains close when cooked, preventing the rice from sticking, and allowing the grains to remain loose ad soft. This is known as the “accordion effect”.
Use two cups and a half for every cup of rice.
The cooking time is approximately five minutes on high, fifteen minutes on low. It is advisable to leave it to rest for five minutes after the cooking time.
