Artichoke Risotto

Ingredients:
- 1 large shallot, finely chopped
- 2 cloves of garlic, minced
- Olmeda Origenes Olive Oil
- 1 liter vegetable or chicken stock
- 300g arborio rice
- 125 ml dry white wine
- 45g grated parmesan cheese
- 30g unsalted butter
- Olmeda Origenes Confit Artichokes
- Fresh parsley, chopped
- Fresh lemon juice
Preparation:
- In a small saucepan, heat the stock and keep it at a gentle simmer. Meanwhile, halve the artichokes. In a skillet, lightly roast half the artichokes in olive oil until golden and crisp. Set aside and season with a pinch of salt.
- In a separate pan, heat more olive oil over medium heat. Sauté the shallot and garlic until soft and translucent. Add the arborio rice and toast for 2–3 minutes, stirring constantly.
- Pour in the white wine and let it reduce completely. Begin adding the warm stock, one ladle at a time, allowing it to absorb before adding the next. Stir continuously to build creaminess.
- When the rice is al dente and the mixture is rich and velvety, stir in the butter and Parmesan. Gently fold in the remaining artichokes.
- Finish with fresh parsley, a squeeze of lemon juice, and a sprinkle of salt to taste. Top with the crispy artichokes and serve immediately.
Artichoke and Burrata

Ingredients:
- Burrata
- Olmeda Origenes confit artichokes
- Olmeda Origenes paprika
- Olmeda Origenes olive oil
- Sundried tomatos
Preparation:
- Open up the artichoke flower and place on grill until lightly crisped.
- While artichoke is being grilled, spread burratta all over on a separate plate as a base for the artichokes.
- Once artichoke is grilled to your liking, place artichoke on top of the burratta.
- Next, in a separate bowl mix together paprika and olive oil for a drizzle on top.
- Lastly, add as many sundried tomatos to your liking and drizzle the paprika and olive oil mixture over the entire dish.
